Ingredients (for 12 bliss balls):

1 cup dates
1 cup walnuts
1 tsp vanilla extract
chia seeds, coconut flakes and carob powder to garnish

Instructions:

  1. Place dates in a bowl, cover with hot water, and let sit for 5-10 minutes.

  2. In the meantime, pulse the walnuts in a food processor until they form a coarse meal. Add in the vanilla extract.

  3. Drain the dates, then add to the food processor. Pulse until they form a uniform, dough-like consistency.

  4. Transfer the mixture into a bowl. Use a teaspoon to form the mixture into even balls.

  5. Spread chia seeds, coconut flakes, and carob powder into three medium-sized piles on a cutting board. Roll a third of the balls in the chia seed pile, another third in the coconut flake pile, and the last third in the carob powder pile.

  6. Store in an airtight container in the fridge for up to two weeks, or in the freezer for up to three months.
